Ingredients
12 large whole green king prawns
50 ml olive oil
2 garlic cloves
1 banana chilli
1 teaspoon finely grated lemon rind
1 tablespoon parsley, chopped
1 tablespoon chervil, chopped

Cooking method

1. Split prawns along their backs, open up to flatten and remove the waste track. Warm olive oil over low heat. Add garlic and chilli and cook without colouring for 1 minute.
2. Remove from the heat and add lemon rind, parsley and chervil. With the prawns laying on their shell and the tail meat exposed, brush the spice/herb/oil mixture on each tail.
3. The prawns will cook very quickly, so cook flesh side down for 30 seconds and shell side down for 1 minute.

Seven thousand years ago, people in the region of what is present-day Iran brewed yeast into the first alcoholic drinks, inventing what we now know as beer. Unfortunately, they had no cake. The ancient Egyptians also drank beer, and although they used yeast to make the first cakes sweetened with honey, they didn’t think to combine beer and cake to make one of humanity’s greatest inventions: beer cake. For this tremendous recipe you can try lager, Guinness, or your favorite brew; each one imparts a different flavor.

Ingredients
CAKE:
3 3/4 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon cloves
1 teaspoon cinnamon
1 teaspoon all spice
1 teaspoon nutmeg
1/2 cup salted butter
1 cup light brown sugar
1 cup sugar
4 eggs
1 1/4 cup honey
Juice and grated zest of 1 lemon
1 bottle honey beer
HONEY BEER FROSTING:
1/2 cup salted butter
3 1/2 cups confectioners’ sugar
1/2 cup honey beer
2 tablespoons honey
FINISH:
2 cups mixed nuts
Directions

Preheat oven to 325°F. Grease and flour a 9-by-13-inch sheet cake pan.

Combine flour, baking soda, baking powder, salt, cloves, cinnamon, allspice, and nutmeg; set aside. In a mixing bowl, cream butter and sugars 3 to 5 minutes, or until light and fluffy. Add eggs one at a time, beating after each addition. Mix in honey, lemon juice, and zest.
Mix in flour mixture and beer in three alternating additions. Bake 40 to 45 minutes, or until a knife comes out clean. Remove from oven and cool.
For the frosting: In a mixing bowl, cream butter with about 1/3 of the confectioners’ sugar. Mix in beer and the rest of the sugar in alternating additions, beating until smooth and creamy. Stir in honey.

Remove cake from the pan and place on a plate large enough to hold the cake and nuts. Cover with frosting and scatter nuts on top and around the plate.

Ingredients
For the Soup:

1 tablespoon olive oil
1 large sweet potato
1 large yellow onion, chopped
13 ounces coconut milk
2 cups almond milk
2 tablespoons curry powder
red or cayenne pepper
1/2 teaspoon ginger
1/2 teaspoon salt

For the Roasted chickpeas:
1 can chickpeas, drained and rinsed
1/2 tablespoons coconut oil
1/2 teaspoon ginger
1/2 teaspoon curry powder
1/4 teaspoon salt
plain greek yogurt, for serving

Directions

Preheat the oven to 400°F.
Poke the sweet potato several times with a fork and wrap it in foil
Bake the sweet potato in the oven until very soft, about 50 to 60 minutes.
Prepare the roasted chickpeas. Drain and rinse the canned chickpeas. Put them in a mixing bowl and toss them with the coconut oil, ground ginger and salt. Spread the chickpeas on a parchment-lined baking sheet and bake at 400 degrees (with the sweet potato) for 20 to 30 minutes until browned and crispy. Remove from oven and set aside.
While you’re roasting the sweet potato, prepare the remainder of the recipe. In a large pot, sauté the onion in olive oil over medium heat until soft and browned, about 15 to 20 minutes.
In a blender, add the coconut milk, almond milk, curry powder, ground ginger, cayenne, salt. Add the sautéed onion and roasted sweet potato and blend until completely smooth.
Pour the soup into a pot and heat just until it reaches a gentle boil.
Serve in bowls with plain Greek yogurt and roasted chickpeas on top!

Simply heaven for almond fans, but you could make it with ground pistachios if you prefer. Best served in very small squares alongside an espresso to balance the sweetness. Keeps for up to five days in an airtight tin.

Makes 30 pieces

250g butter, melted, plus extra for brushing
400g marzipan
4 eggs
350g ground almonds
225g granulated sugar
4 tsp almond extract
Zest of an orange (optional)
50g almonds, roughly chopped

Preheat the oven to 180C/350F/gas mark 4. Cut a rectangle of baking parchment to line the bottom of a 30 x 23 x 4cm baking tin. Brush the tin liberally with melted butter before popping in the baking parchment.

Knead the marzipan to soften it. Roll it between two pieces of baking parchment to fit the baking tin. Set aside.

Put the eggs into a large mixing bowl. Add the ground almonds, sugar and almond extract, then add the melted butter. Beat with an electric mixer at high speed until smooth and creamy. Add the grated orange zest to the mixture if using and mix well.

Pour half of the mixture into the tin, and smooth over with a palette knife. Gently place the rolled-out marzipan on top.

Pour over the remaining cake mixture and smooth over, taking care to cover the marzipan completely.

Sprinkle the chopped almonds over the top.

Bake for 30 minutes, until the top and sides are a light golden colour. To check, push the cake away from the edge of the tin with a palette knife and have a peek.

8 Cut into small squares. This can be served either warm or cold.

Ingredients

1 packet of tubular spaghetti, cooked in salted water and strained
1 tablespoon of olive oil
1kg of mince
1 large onion, diced
1 can of tomatoes, diced
1 teaspoon dried oregano
salt and pepper to taste
2 cups of water
125g grated parmesan cheese
5 cups milk
5 tablespoons plain flour
5 tablespoons butter

Preparation method

Cook spaghetti and set aside. Preheat oven to 220°C.
In a saucepan, brown onion then add mince and brown also.
Add tomatoes, oregano, salt and pepper to taste.
Add about 2 cups of water and stir.
Turn heat down to about medium and cook mince for about 20 to 30 minutes or until most of the liquid has been evaporated. Stir occasionally then turn stove off and leave.
Make béchamel sauce by melting butter in another saucepan, remove from stove, add flour and stir in. Add milk and stir well.
Return to stove and stir continuously until sauce boils and thickens. Add a pinch of salt.
In a baking dish layer as follows: sprinkle of cheese; half of the pasta; sprinkle of cheese; all of the mince mixture; sprinkle of cheese; rest of pasta; sprinkle of cheese; and all of béchamel sauce.
At this point stab and wiggle a knife in several places of the dish so that the sauce goes to the bottom, then end with rest of parmesan cheese.
Bake in the oven for about 30 to 40 minutes or until top is golden brown.

Ingredients
2 bananas
2 tablespoons golden syryp
¾ cup sugar
1 egg
1 cup self-raising flour
pinch of salt

Preparation method

Heat oven to 180°C (160°C fan forced).

Grease and line the base of a loaf pan.

In a medium bowl, mash bananas then add golden syryp. Add sugar and stir in.
Add egg, sifted flour and salt and lightly mix until combined.

Pour into loaf pan and cook for 30 minutes or until a skewer is inserted into the middle comes out clean.

Allow to cool in tin for 10 minutes, then turn onto wire rack to cool.

Enjoy it warm straight from the oven or lightly grill it and then enjoy with butter melting on top.

Tip: you can also make variations to this by throwing in a handful of chopped dates just before pouring into tin to bake or adding choc chips to make a choc banana bread.

Greek-style Roast Lamb With Potatoes

Ingredients

2 tablespoons olive oil
1kg baby new potatoes
2kg lamb leg
2 sprigs fresh rosemary, chopped coarsely
2 tablespoons finely chopped fresh flat-leaf parsley
2 tablespoons finely chopped fresh oregano
3 cloves garlic, crushed
1 tablespoon finely grated lemon rind
2 tablespoons lemon juice
1/2 cup (125ml) beef stock

Preparation method

1. Heat half the oil in large frying pan; cook potatoes until browned. Transfer to 4.5-litre (18-cup) slow cooker.
2. Make small cuts in lamb at 2.5cm intervals; press rosemary into cuts. Combine remaining oil, parsley, oregano, garlic, rind and juice in small bowl; rub mixture all over lamb; season.
3. Cook lamb in same heated pan until browned all over. Place lamb on top of potatoes; add stock. Cook, covered, on low, 8 hours.
4. Remove lamb and potatoes; cover lamb; stand 10 minutes before slicing.
5. Serve lamb with potatoes and sauce. Accompany with a Greek salad or steamed spinach, if desired.

Not suitable to freeze or microwave.

COOK’S NOTE: Lamb can be covered and refrigerated overnight at step 2. If you do not have a slow cooker, roast the lamb after browning in a slow oven 120°C/100°C fan forced for approximately 4-5 hours or until very tender. Cover with foil for the first half of cooking time.
