Pastitsio – Greek Lasagna

Ingredients

1 packet of tubular spaghetti, cooked in salted water and strained
1 tablespoon of olive oil
1kg of mince
1 large onion, diced
1 can of tomatoes, diced
1 teaspoon dried oregano
salt and pepper to taste
2 cups of water
125g grated parmesan cheese
5 cups milk
5 tablespoons plain flour
5 tablespoons butter

Preparation method

Cook spaghetti and set aside. Preheat oven to 220°C.
In a saucepan, brown onion then add mince and brown also.
Add tomatoes, oregano, salt and pepper to taste.
Add about 2 cups of water and stir.
Turn heat down to about medium and cook mince for about 20 to 30 minutes or until most of the liquid has been evaporated. Stir occasionally then turn stove off and leave.
Make béchamel sauce by melting butter in another saucepan, remove from stove, add flour and stir in. Add milk and stir well.
Return to stove and stir continuously until sauce boils and thickens. Add a pinch of salt.
In a baking dish layer as follows: sprinkle of cheese; half of the pasta; sprinkle of cheese; all of the mince mixture; sprinkle of cheese; rest of pasta; sprinkle of cheese; and all of béchamel sauce.
At this point stab and wiggle a knife in several places of the dish so that the sauce goes to the bottom, then end with rest of parmesan cheese.
Bake in the oven for about 30 to 40 minutes or until top is golden brown.

Ingredients
2 bananas
2 tablespoons golden syryp
¾ cup sugar
1 egg
1 cup self-raising flour
pinch of salt

Preparation method

Heat oven to 180°C (160°C fan forced).

Grease and line the base of a loaf pan.

In a medium bowl, mash bananas then add golden syryp. Add sugar and stir in.
Add egg, sifted flour and salt and lightly mix until combined.

Pour into loaf pan and cook for 30 minutes or until a skewer is inserted into the middle comes out clean.

Allow to cool in tin for 10 minutes, then turn onto wire rack to cool.

Enjoy it warm straight from the oven or lightly grill it and then enjoy with butter melting on top.

Tip: you can also make variations to this by throwing in a handful of chopped dates just before pouring into tin to bake or adding choc chips to make a choc banana bread.

Greek-style Roast Lamb With Potatoes

Ingredients

2 tablespoons olive oil
1kg baby new potatoes
2kg lamb leg
2 sprigs fresh rosemary, chopped coarsely
2 tablespoons finely chopped fresh flat-leaf parsley
2 tablespoons finely chopped fresh oregano
3 cloves garlic, crushed
1 tablespoon finely grated lemon rind
2 tablespoons lemon juice
1/2 cup (125ml) beef stock

Preparation method

1. Heat half the oil in large frying pan; cook potatoes until browned. Transfer to 4.5-litre (18-cup) slow cooker.
2. Make small cuts in lamb at 2.5cm intervals; press rosemary into cuts. Combine remaining oil, parsley, oregano, garlic, rind and juice in small bowl; rub mixture all over lamb; season.
3. Cook lamb in same heated pan until browned all over. Place lamb on top of potatoes; add stock. Cook, covered, on low, 8 hours.
4. Remove lamb and potatoes; cover lamb; stand 10 minutes before slicing.
5. Serve lamb with potatoes and sauce. Accompany with a Greek salad or steamed spinach, if desired.

Not suitable to freeze or microwave.

COOK’S NOTE: Lamb can be covered and refrigerated overnight at step 2. If you do not have a slow cooker, roast the lamb after browning in a slow oven 120°C/100°C fan forced for approximately 4-5 hours or until very tender. Cover with foil for the first half of cooking time.

Ingredients
2 cups gluten free self-raising flour
100 g lean ham, finely chopped (See Notes)
2 eggs, lightly beaten
90 g margarine, mono- or polyunsaturated
2 small zucchini, coarsely grated
1 cup cooked white long grain rice
3/4 cup grated parmesan cheese
1 cup low fat milk
1 tablespoon seeded mustard, (check that brand is gluten free)
canola or olive oil spray

Cooking method

1. Preheat oven to 180°C. Spray muffin tins lightly with oil spray.
2. Place all ingredients in a large bowl.
3. Stir with a metal spoon until just combined.
4. Spoon mixture into prepared pan.
5. Bake for 25 minutes or until the muffins are browned.
6. Turn onto a wire rack.

Notes: Use ham off the bone or Virginian ham only

For the Cake:
6 tablespoons cold salted butter, plus more for pans
2¼ cups sugar
1½ tablespoons vanilla extract
8 tablespoons (1 stick) salted butter, melted
5 egg yolks
3 whole eggs
2½ cups cake flour, plus more for pans
1 tablespoon salt
1 tablespoon baking powder
½ cup buttermilk
¾ cup heavy cream

For the Glaze:

½ cup coconut milk
2 tablespoons powdered sugar

Directions
1. Preheat the oven to 325°F. Butter and flour three 9-inch round cake pans, put a parchment round in the bottom of each pan, and butter and flour the rounds.
2. On medium speed, beat the cold butter in the bowl of an electric stand mixer fitted with the paddle attachment, until it is very light, about 5 minutes. Continue beating while gradually adding the sugar, scraping down the sides of the bowl as necessary.
3. Add the vanilla and beat for 5 more minutes, scraping down the sides of the bowl again. The mixture will be very coarse and grainy. Turn the mixer to the lowest speed, add the melted butter, egg yolks, and whole eggs, and then turn off the mixer.
4. In a large bowl, sift together the flour, salt, and baking powder.
5. In another bowl, mix together the buttermilk and cream.
6. With the mixer on the lowest speed, add half the flour mixture, and then half the buttermilk mixture. Add the remainder of the flour and buttermilk mixtures, scraping down the sides of the bowl as necessary. Do not overmix or the cake will be tough.
7. Pour the batter evenly into the prepared pans, tapping each pan on a sturdy surface to release air bubbles if there are any, and bake for 25 to 30 minutes until a toothpick or knife comes out clean.
8. Cool the cakes for 10 minutes, then run the dull edge of a knife around their perimeters and invert them onto a cold baking sheet or rack. (Note: These cakes may be frozen for up to 3 months.)
9. When you are ready to ice the cake, slice each layer in half horizontally so that you have 6 layers.
10. To make the glaze, whisk together the powdered sugar and coconut milk in a small bowl. Pierce each cake layer with a fork in several places and then spoon or brush the glaze over them before icing.
11. Make sure all the layers are completely cool before icing.

For the Coconut Icing:
Enough for one six-layer 9-inch cake
1½ cups fresh or dried coconut, shredded and toasted
18 ounces cream cheese, at room temperature
18 tablespoons salted butter, at room temperature
3 tablespoons vanilla extract
7½ cups powdered sugar
2¼ teaspoons salt
6 tablespoons coconut milk
5⅓ cups sweetened flaked coconut

Directions

1. Preheat the oven to 350°F.
2. Spread the fresh or dried coconut on a metal baking sheet and toast for about 5 to 7 minutes, until it is brown. Remove from the oven and reserve.
3. In the bowl of an electric stand mixer fitted with the paddle attachment, combine the cream cheese, butter, and vanilla extract, and beat the mixture on medium speed for about 5 minutes, until it is light and fluffy.
4. In a large mixing bowl, combine the powdered sugar and salt, and add it to the cream cheese mixture, 1 cup at a time, beating it until it is smooth after each addition. Turn the mixer to the lowest speed, add the coconut milk, and stir in the sweetened flaked coconut.
5. Arrange the cooled layers, one by one, on a cake stand, icing each layer as you assemble, using approximately 1 cup of icing per layer, and then top with the toasted coconut.

500g chicken thighs, trimmed and cube

Bay leaves
Juice of 1 lemon

Preparation method

Place all the ingredients in a bowl and refrigerate for 3 hours. Soak wooden skewers in cold water. Thread the chicken onto the skewers and sear on a hot barbecue. Baste with the marinade while turning frequently, until cooked.

8 eggs, beaten
1 cup thinly sliced celery
1 cup bean sprouts
1/2 cup diced fresh mushrooms
1/3 cup chopped cooked chicken breast
1/3 cup cooked and crumbled beef mince
1/3 cup chopped cooked pork
1 teaspoon salt
1/4 teaspoon ground black pepper

SAUCE:
2 chicken stock cubes
1 1/2 cups (375ml) hot water
1 1/2 teaspoons white sugar
2 tablespoons soy sauce
6 tablespoons cold water
1 1/2 tablespoons cornflour

Preparation method
Prep: 5 minutes | Cook: 25 minutes

Beat eggs in a large bowl. Add the celery, onion, bean sprouts, mushrooms, chicken, beef, pork, salt and pepper. Mix together.
Heat oil in a medium frypan or wok and brown egg mixture 1/2 cup at a time. When all of the mixture is browned, set aside.
To Make Sauce: Dissolve the stock cubes in the hot water in a small saucepan; add sugar and soy sauce and blend well over medium heat. Add cold water and cornflour and stir until thick and smooth.

Ingredients

Serves: 10

375g cream cheese
1/2 cup (125g) white sugar
3 eggs, room temperature
90g milk chocolate, coarsely chopped
7 tablespoons thickened cream
2 tablespoons coffee flavoured liqueur
1/2 cup (125ml) whipped cream
30g dark chocolate, grated

Preparation method
Prep: 15 minutes | Cook: 55 minutes

Preheat oven to 150 degrees C.
In a mixing bowl blend cream cheese and sugar until smooth. Beat in the eggs one at a time.
Mix in 3 tablespoons cream and the coffee-flavoured liquor. Pour into an 20cm glass pie dish.
In a small saucepan melt the chocolate with remaining 4 tablespoons of cream.
Drizzle chocolate in a spiral pattern over filling. Stir lightly with tip of table knife to achieve a marbling effect.
Set the pie dish in a larger dish with water that comes halfway up side of pie dish.
Bake at 150 degrees C until firm in the centre; about 55 minutes. Cool completely then refrigerate covered with plastic wrap, overnight.
Garnish with whipped cream piped or dolloped around edges and shaved chocolate in centre.

Instructions

Ingredients
4 (6-ounce) red potatoes
2 teaspoons olive oil
1 1/4 cups fat-free, lower-sodium chicken broth
3 tablespoons all-purpose flour
2 cups 1% low-fat milk, divided
1/4 cup reduced-fat sour cream
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
3 bacon slices,
halved 1.5 ounces cheddar cheese, shredded (about 1/3 cup)
4 teaspoons thinly sliced green onions

Preparation

1. Pierce potatoes with a fork. Microwave on HIGH 13 minutes or until tender. Cut in half; cool slightly.
2. While potatoes cook, heat oil in a saucepan over medium-high heat. Add onion; sauté 3 minutes. Add broth. Combine flour and 1/2 cup milk; add to pan with 1 1/2 cups milk.
Bring to a boil; stir often. Cook 1 minute. Remove from heat; stir in sour cream, salt, and pepper.
3. Arrange bacon on a paper towel on a microwave-safe plate. Cover with a paper towel; microwave on HIGH for 4 minutes. Crumble bacon.
4. Discard potato skins. Coarsely mash potatoes into soup. Top with cheese, green onions, and bacon.
