Cherry Pecan Bread
Ingredients
3/4 cup sugar
1/2 cup unsalted butter
softened 2 eggs
2 cups sifted flour
1 teaspoon salt
1 teaspoon baking soda
1 cup buttermilk
1 cup chopped pecans
1 (10-ounces) jar maraschino cherries, drained, juice reserved, and chopped 1 teaspoon vanilla extract 2 tablespoons powdered sugar

Instructions

Preheat oven to 350 degrees  F.   Cream together sugar and butter. Add eggs and vanilla and beat on medium speed until light and fluffy.

In a separate bowl, sift together flour, baking soda and salt. Add the pecans and the cherries to the dry mixture and toss to coat.

Alternate adding the dry mixture and the buttermilk to the creamed sugar mixture until combined.

Turn batter into a well-greased 2-quart mold or bundt pan (I think a loaf pan might be better).

Bake 55-60 minutes. Cool in pan on rack for 15 minutes, then remove from pan and cool completely.

For the drizzle mix powdered sugar with maraschino cherry juice to the consistency wanted.

Drizzle over bread.

Bread and Butter Pudding with Banana and Almonds

Ingredients

  • 300ml thickened cream
  • 300ml milk
  • 6 eggs, beaten lightly
  • ¾ cup (165g) caster sugar
  • 1 teaspoon vanilla extract
  • 50g butter
  • 8 slices white bread
  • 2 small (260g) bananas, sliced diagonally
  • 1⁄3 cup (55g) sultanas
  • ¼ cup (80g) apricot jam
  • ¼ cup (20g) flaked almonds

Preparation method

In a large mixing bowl, combine cream, milk, eggs, sugar and vanilla.

Butter the bread and trim off the crusts. The bread can be cut into rectangles or triangles, depending on the shape of
your dish.

Lightly grease an ovenproof dish (2 litres/8-cup capacity). Arrange 1/3 of the bread in dish. Top with ½ the banana and sultanas. Pour over 1/3 of the egg mixture. Repeat, then place the remaining bread on top. Pour remaining egg mixture into the dish. Stand for 20 minutes.

Meanwhile, preheat oven to 180°C (160°C fan-forced). Bake pudding for about 30 minutes or until set.

Heat the jam in the microwave on HIGH (100%) for about 30 seconds or until liquid. Remove pudding from the oven. Brush the top with jam. Sprinkle with almonds and return to the oven for 5 minutes. Serve warm with cream, if desired.

Pizza Pull Apart Bread

Ingredients:
1/2 batch pizza dough, homemade or store-bought
1/2 cup pizza sauce
1 cup shredded mozzarella cheese
1/4 cup sliced pepperoni
Additional toppings of your choice

Directions:
On a floured surface, roll your pizza dough out into a large rectangle. Top with sauce, cheese and pepperoni. Using a pizza cutter or a very sharp knife, cut the dough into long strips, then into squares, so you end up with about 20 squares. Stack the squares onto of each other, and stack into a greased loaf pan. (For pictures of this technique, check out how I did it with this cinnamon pull-apart bread). Cover the pan with plastic wrap and allow to rise for 30 minutes.

Preheat the oven to 400 degrees. Baked for 20-25 minutes until the top is golden brown. Allow to pizza to rest for 10 minutes before turning onto a serving platter. Serve with additional pizza sauce, if desired.

Banana Bread – Best Ever

Ingredients
2 bananas
2 tablespoons golden syryp
¾ cup sugar
1 egg
1 cup self-raising flour
pinch of salt

Preparation method

Heat oven to 180°C (160°C fan forced).

Grease and line the base of a loaf pan.

In a medium bowl, mash bananas then add golden syryp. Add sugar and stir in.
Add egg, sifted flour and salt and lightly mix until combined.

Pour into loaf pan and cook for 30 minutes or until a skewer is inserted into the middle comes out clean.

Allow to cool in tin for 10 minutes, then turn onto wire rack to cool.

Enjoy it warm straight from the oven or lightly grill it and then enjoy with butter melting on top.

Tip: you can also make variations to this by throwing in a handful of chopped dates just before pouring into tin to bake or adding choc chips to make a choc banana bread.
